We have a new obsession to share with you! We cannot get enough of making platter style lunches for our office meal. Not only do they offer lots of variety but they are fun to make and will have all of your coworkers wishing you made lunch for the entire office!
Start with a large glass container that has a lid. We have been using a medium size Pyrex baking dish because the size is perfect and it comes with a great lid. Then you just start building. Below are some options that go great in a platter;
- Clementine or orange slices
- Cherry tomatoes
- Peas and beans
- Apple slices
- Dragon fruit balls
- Melon balls
- Kiwi slices
- Nuts and seeds
- Watermelon slices
- Peaches or nectarine slices
The idea of having that many items in one platter can seem daunting but if you are buying the right groceries it can be as easy as cleaning out your fridge. We like to have pre-cut veggies available at all times. In the morning we just get our platters out and go through the fridge adding as much as we would like.
We recommend trying to keep dry items like crackers separate with a cute little dish or ramekin inside so they do not take on any moisture on your commute to work. A separate container for any dips or olives may be wise too so that things don’t mix and your platter looks amazing when you take off the lid.
Don’t skip on the garnish and presentation of the platter. Although it may seem time consuming it is always worth it to feel proud of your lunch and excited to eat it. The prettier it is the more you will enjoy it! You can garnish with leafy greens, sprouts, parsley or any fresh herb, cherry tomatoes, nuts and seeds. Make it your own!
Using one large glass container as opposed to needing several small plastic ones cuts back on dishes, BPA exposure and your impact on the environment. Now that is something that we can get behind!
